Instructions
Start by soaking 1 lb. dry black-eyed peas overnight. If you are skipping the soaking step, follow the note for the adjusted cook time. In the morning, drain the water from the peas.
Add the drained 1 lb. dry black-eyed peas to the slow cooker. Pour in 32 oz. chicken broth, then add 14 oz. petite diced tomatoes, 1 cup diced ham, ½ diced onion, 1 teaspoon minced garlic, and ½ teaspoon pepper. Stir to combine.
Cover and cook on LOW for 10 hours. OR HIGH for 6 hours. Do not open the lid during the cooking time.
Serve warm and enjoy.
