Instructions
In a small bowl, whisk together ½ cup chicken stock, 6 ounces tomato paste, 2 teaspoons yellow curry powder, 1 teaspoon garam masala, 1 teaspoon ground turmeric, 1 teaspoon salt, and ½ teaspoon black pepper.
Place 2 pounds boneless skinless chicken thighs cut into 1-inch chunks, ½ diced onion, 2 teaspoons minced garlic, and 1 teaspoon ground ginger into a 4-quart slow cooker.
Cover and cook on low heat for 4 hours.
Stir in 1 cup heavy cream, 1 tablespoon brown sugar, and the juice of 1 lime.
Taste and season with additional salt and pepper if needed.
Serve the butter chicken immediately over 2 cups cooked rice and enjoy!
