Instructions
Place 8 cups collard greens, with the ribs and stems removed and the leaves cut into bite-sized pieces, into a 6-quart slow cooker.
Place 2 smoked ham hocks on top of the collard greens. Add 6 slices cooked and chopped thick-cut bacon, 3 tablespoons bacon grease, 1 tablespoon minced garlic, 2 tablespoons apple cider vinegar, 1 teaspoon salt, ½ teaspoon black pepper, and 4 cups water.
Cover and cook on low for 7-8 hours or on high for 3.5-4 hours until the ham hocks are tender.
Remove the ham hocks from the crock pot, discard the skins and shred any meat off of them.
Stir the meat back into the crock pot with the greens. Serve warm and enjoy!
Notes
Refrigerate the leftovers in an airtight container for up to 3-4 days.
