You will love the flavors of this Crock Pot Kielbasa and Potatoes Recipe. It is easy to make and seasoned with simple spices that you probably already have.
114 ounce package kielbasa sausage, sliced into 1/2-inch rounds
1 ½poundspre-diced potatoes
1large oniondiced
2clovesgarlicminced
1cupchicken broth
¼cupDijon mustard
1tablespoonhoney
1teaspoondried thyme
½teaspoonsalt
¼teaspoonblack pepper
Instructions
In a 6-quart crock pot, combine 1 14-ounce package kielbasa sausage sliced into 1/2-inch rounds, 1 ½ pounds pre-diced potatoes, 1 diced large onion, and 2 cloves minced garlic.
In a separate bowl, whisk together 1 cup chicken broth, ¼ cup Dijon mustard, 1 tablespoon honey, 1 teaspoon dried thyme, ½ teaspoon salt, and ¼ teaspoon black pepper until well combined.
Pour the broth mixture over the kielbasa and potatoes in the crock pot, stirring gently to distribute the liquid evenly.
Cover the crock pot and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the potatoes are tender and the flavors have blended together.

Ore-Ida Diced Hash Brown Potatoes is what I used for this recipe or Simply Potatoes Diced Potatoes will work great as well. If you want to use fresh potatoes, dice them into 1/2-inch cubes and increase the cooking time by 1-2 hours on low or 30-60 minutes on high.Refrigerate the leftovers in an airtight container for up to 5 days.
