Line a large baking sheet or tray with waxed paper or parchment paper and set aside.
In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla until smooth.
Gradually mix in the powdered sugar, 1 cup at a time, until fully incorporated. The mixture will become thick, so use your hands to knead it if needed.
Scoop about 1 tablespoon of the mixture and roll it into a ball. Gently shape each ball into a football and place it on the prepared baking sheet. Repeat with the remaining mixture.
In a double boiler (or a heatproof bowl set over a saucepan of simmering water), melt the chocolate chips with the shortening, stirring until smooth. You can also melt them in the microwave in 30-second intervals, stirring between each interval.
Using a candy dipper or fork, dip each peanut butter football into the melted chocolate, allowing the excess chocolate to drip off. Return the coated footballs to the prepared baking sheet.
Refrigerate for 15-30 minutes, or until the chocolate coating is completely set.
Pipe white sparkle gel onto each football to create the laces. Let the gel dry before serving.
