French Onion Beef and Noodles is a delicious One Pot Recipe that the entire family will love! Beef and Noodles cook in a creamy savory sauce that makes for the best comfort meal.
Heat 2 tablespoons olive oil in a large pot or skillet over medium-high heat.
Add 1 pound beef stew meat and season with 1 teaspoon onion powder, 2 teaspoons minced garlic, 1 teaspoon black pepper, and ½ teaspoon salt.
Cook for 3–5 minutes until the beef is seared on all sides.
Pour in 1 can (10.5 oz) French onion soup and 3 cups beef broth. Bring to a simmer.
Cover and simmer on low for 45 minutes until the beef is tender.
Add 12 ounces egg noodles and continue simmering for about 10 minutes, stirring occasionally, until the noodles are cooked.
Remove from heat and stir in ½ cup sour cream and ¼ cup Parmesan cheese.
Sprinkle 1 cup French fried onions on top and serve.

Refrigerate the leftovers in an airtight container for up to 5 days. Stew meat is great, but I also love using round steak cut into 1 inch pieces. Make sure to let the beef simmer on low so that it is tender. Check the beef and if it’s not fork tender after cooking for 45 minutes, continue to cook on low until the beef is tender. Add more liquid or broth if needed.
