Divide the ground beef into 4 loosely packed balls, about 4 ounces each. Refrigerate until ready to cook.
Preheat a griddle or cast-iron skillet over medium-high heat to approximately 400°F.
Brush the cut sides of the hamburger buns with melted butter. Place them cut-side down on the griddle and toast for about 2 minutes. Remove and set aside.
Divide the sliced onion into 4 even piles on the hot griddle. Place one ball of ground beef on top of each pile.
Place a piece of parchment paper over each ball of beef. Using a burger press or large spatula, firmly smash each ball into a thin patty. Remove and discard the parchment paper. Season the patties with garlic salt and pepper.
Cook for 2–4 minutes, or until the edges are browned and juices begin to rise to the surface.
Scrape underneath each patty to loosen the onions and beef from the griddle, then flip. Press each patty down once more and cook for 1 minute.
Place a slice of American cheese on each patty and cook until melted.
Transfer the patties and onions to the toasted buns and serve immediately.

Notes
When forming the beef balls, keep them loosely packed so they are easy to smash. For the best flavor and juiciness, use 80/20 ground beef. Leaner 90/10 or 93/7 ground beef can also be used.
