Preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
In the bowl of a stand mixer, combine 1 box white cake mix, ? cup vegetable oil, and 2 large eggs. Mix until a soft dough forms and all the ingredients are fully incorporated.
Divide the dough evenly between 2 mixing bowls.
Add red gel food coloring to one bowl and mix until the dough is evenly colored.
Add leaf green gel food coloring to the second bowl and mix until the dough is evenly colored.
Scoop about 2 teaspoons of the green dough and 1 teaspoon of the red dough. Gently press the two colors together and roll into a ball, being careful not to over mix the colors.
Pour 1 container of white sanding sugar into a shallow bowl.
Roll each dough ball in the sanding sugar until completely coated.
Place the coated dough balls about 2 inches apart on the prepared baking sheets.
Gently flatten each dough ball with the palm of your hand or the bottom of a glass until it forms a thick, flat disk.
Bake for 7-8 minutes, or until the cookies are set. Do not over bake.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving.
