Unwrap the 8-pound spiral sliced ham and discard any glaze or seasoning packets that came with the ham.
Place the ham flat-side down in a foil-lined roasting pan.
In a small saucepan, combine 2 tablespoons melted butter, ¼ cup honey, 1 tablespoon Dijon mustard, 1½ cups granulated sugar, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon ground ginger, ¼ teaspoon ground cloves, and ¼ teaspoon allspice. Heat over low heat, stirring until the sugar is dissolved. Do not bring the mixture to a boil.
Brush approximately one-third of the glaze over the ham, making sure to work some of the glaze between the slices if possible.
Pour about 1 cup of water into the bottom of the roasting pan.
Cover the ham loosely with foil and bake for approximately 2 hours and 40 minutes (about 20 minutes per pound), or until the ham reaches an internal temperature of 140°F.
Halfway through the cooking time, baste the ham with another one-third of the glaze.
Remove the ham from the oven and switch the oven to the broil setting. Remove the foil and brush the remaining glaze evenly over the ham.
Return the uncovered ham to the oven and broil for 2-4 minutes, watching closely, until the glaze is caramelized.
Remove the ham from the oven and let it rest for 5 minutes before slicing and serving.
Notes
