Instructions
Line a baking sheet or large tray with wax paper or parchment paper and set aside.
Fill a large pot with hot (not boiling) water and stir in 1 teaspoon white vinegar.
Insert a wooden stick into the stem end of each apple. Dip each apple into the hot water for 5-10 seconds, then rub the surface with a clean towel to remove the wax. Dry the apples completely.
In a medium heavy-bottomed saucepan, combine ¾ cup heavy cream, corn syrup, butter, and sugar.
Cook over medium heat, stirring frequently, until the butter melts and the sugar dissolves. Continue cooking until the caramel reaches 245°F (firm ball stage) on a candy thermometer.
Remove the saucepan from the heat. Carefully stir in the remaining ¼ cup heavy cream and the vanilla extract. The caramel will bubble vigorously, so stir slowly and carefully.
Working one apple at a time, dip each apple into the caramel, turning to coat completely. Let the excess caramel drip back into the pan.
If desired, immediately roll the caramel-coated apples in the chopped peanuts or other toppings before the caramel sets.
Place the apples on the prepared baking sheet and refrigerate for 15-20 minutes, or until the caramel is firm.

Notes
Refrigerate caramel apples for up to 3 days. For the best texture, let them sit at room temperature for 10-15 minutes before serving.
Removing the wax from the apples is essential so the caramel sticks properly.
If the caramel begins to thicken while dipping, warm it over low heat for 1-2 minutes, stirring constantly.
Chopped peanuts are optional. You can also use sprinkles, crushed cookies, mini chocolate chips, or chopped candy bars for decorating.
