Ingredients
In a small bowl combine these ingredients well:

rosemary

Kosher salt

Instructions
For the brine, place the chicken in a large pot or bowl and cover with cold water. Stir in ½ cup kosher salt. Refrigerate for 1–4 hours.
Remove the chicken from the brine and pat it thoroughly dry with paper towels.
Preheat the oven to 350°F.
In a small bowl, combine the crushed garlic, rosemary, 1 teaspoon kosher salt, black pepper, and olive oil.
Rub the seasoning mixture evenly over the entire chicken.
Place the chicken breast-side down in a roasting pan.
Roast for approximately 20 minutes per pound, plus an additional 15 minutes, or until the thickest part of the thigh reaches 165°F.
Remove the chicken from the oven and let it rest for 10–15 minutes before carving.
Carve and serve.
