Ingredients
4boneless skinless chicken breasts
4Russet potatoes peeled and cut into 2 inch pieces
2cupsbaby carrots
1packet of dry ranch dressing mix
1cancream of chicken soup(10 oz)
½cupmilk
½cup water
Instructions
In a bowl, whisk together ½ cup milk, 1 (10 oz) can cream of chicken soup, and 1 packet ranch seasoning.
Add ½ cup water to the bottom of the Instant Pot.
Place 4 chicken breasts, 4 peeled and chopped potatoes, and 2 cups baby carrots inside.
Pour the soup mixture over the top.
Seal and cook on high pressure for 20 minutes, then quick release.
Serve chicken, potatoes, and carrots with the sauce spooned over the top.
Notes
*Refrigerate the leftovers in an air tight container for up to 5 days. *You can also use 3 regular carrots (peeled and cut into large pieces) instead of the baby carrots if you prefer. *Any cream soup would work great in this recipe instead of the cream of chicken soup.
