Instant Pot Creamy Ranch Chicken Dinner

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 Russet potatoes peeled and cut into 2 inch pieces
  • 2 cups baby carrots
  • 1 packet of dry ranch dressing mix
  • 1 can cream of chicken soup (10 oz)
  • ½ cup milk
  • ½ cup water

Instructions

  • In a bowl, whisk together the milk, cream of chicken soup and ranch seasoning.
  • Add the water to the bottom of the Instant Pot.
  • Place the chicken breasts, potatoes and baby carrots into the Instant Pot.
  • Pour the soup mixture over the top.
  • Seal and cook on high pressure for 20 minutes, then quick release.
  • Serve chicken, potatoes, and carrots with the sauce spooned over the top.

Notes

Refrigerate the leftovers in an air tight container for up to 5 days. 
You can also use 3 regular carrots (peeled and cut into large pieces) instead of the baby carrots if you prefer. 
Any cream soup would work great in this recipe instead of the cream of chicken soup.
