Instant Pot Creamy Ranch Chicken Dinner

Ingredients
- 4 boneless skinless chicken breasts
- 4 Russet potatoes peeled and cut into 2 inch pieces
- 2 cups baby carrots
- 1 packet of dry ranch dressing mix
- 1 can cream of chicken soup (10 oz)
- ½ cup milk
- ½ cup water
Instructions
- In a bowl, whisk together ½ cup milk, 1 (10 oz) can cream of chicken soup, and 1 packet ranch seasoning.
- Add ½ cup water to the bottom of the Instant Pot.
- Place 4 chicken breasts, 4 peeled and chopped potatoes, and 2 cups baby carrots inside.
- Pour the soup mixture over the top.
- Seal and cook on high pressure for 20 minutes, then quick release.
- Serve chicken, potatoes, and carrots with the sauce spooned over the top.
Notes
*Refrigerate the leftovers in an air tight container for up to 5 days.
*You can also use 3 regular carrots (peeled and cut into large pieces) instead of the baby carrots if you prefer.
*Any cream soup would work great in this recipe instead of the cream of chicken soup.
