Instant pot french dip sandwiches are super easy in the pressure cooker and take only minutes. The beef is so tender and our family goes crazy over these!
Place the 3–4 pound beef roast into the Instant Pot.
Add ½ sliced onion, 1 packet onion soup mix, 2 teaspoons minced garlic, and 4 cups beef broth to the Instant Pot.
Cover the Instant Pot and set the valve to the sealing position.
Cook on high pressure for 60 minutes.
Carefully perform a quick release once the cooking time is complete.
Remove the beef roast from the Instant Pot and shred the meat with two forks.
Toast the 6 hoagie rolls if desired.
Pile the shredded beef onto the toasted hoagie rolls and top each sandwich with 2 slices provolone cheese.
Place the sandwiches under the broiler for 1–2 minutes if desired to melt the cheese.
Serve the sandwiches with the broth from the Instant Pot for dipping and enjoy!
Notes
For a thicker dipping sauce, whisk together ¼ cup cornstarch and ¼ cup water. Stir the mixture into the broth and turn the Instant Pot to sauté mode. Cook while stirring until the sauce thickens.
