Instructions
Preheat the oven to 350°F and spray an 8x8-inch baking dish with non-stick cooking spray.
Cut 1 head cauliflower into small bite-sized florets.
Place the cauliflower in a microwave-safe bowl with ¼ cup water. Cover and microwave in 3-minute intervals until the cauliflower is fork-tender. Alternatively, steam the cauliflower on the stovetop until tender.
In a large mixing bowl, stir together 4 oz softened cream cheese and ½ cup sour cream until smooth.
Add 1½ cups shredded cheddar cheese, 5 strips cooked and crumbled bacon, ½ cup diced green onions, ½ tsp minced garlic, 1 tsp salt, and ½ tsp black pepper. Stir until well combined.
Add the cooked cauliflower and gently stir until all the cauliflower is coated with the cheese mixture.
Transfer the mixture to the prepared baking dish and spread evenly.
Top with the remaining ½ cup shredded cheddar cheese and the remaining 1 strip crumbled bacon.
Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.
Serve warm and enjoy.
