Make Marry Me Butter Beans with pantry staples for a creamy base soup that just might earn you a proposal! This soup is ready in about 15 minutes which makes it the perfect soup recipe for a cozy weeknight or any time.
Melt 2 tablespoons butter in a large pot over medium high heat.
Stir in 2 minced garlic cloves, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon dried oregano, ½ teaspoon paprika, and ¼ teaspoon crushed red pepper flakes. Stir and sauté for a few minutes until you can start to smell the garlic.
Stir in ½ cup drained and roughly chopped sun dried tomatoes, ½ cup chicken broth, and 2 cans butter beans.
Continue to cook, uncovered, for 5-7 minutes until heated through.
Remove the pan from the heat.
Immediately stir in 1 cup chopped fresh spinach, 1 cup heavy cream, ½ cup grated parmesan cheese, and 2 tablespoons chopped fresh basil. Stir and let set until the spinach starts to wilt and the sauce thickens.
Serve immediately while warm and enjoy!

You can easily mix in cooked rice or pasta if you would like. If adding in, add in ½ cup more broth to this bean mixture. Also, you can easily add in shredded cooked chicken, cooked ground beef or sausage to add more protein to make these a one pot meal. Refrigerate any leftovers in an airtight container for up to 5 days.
