(peeled and diced into 2" pieces)

Instructions
Peel the sweet potatoes and cut them into 2-inch pieces so they cook evenly.
Place the sweet potatoes in a large stockpot and cover them with cold water by about 1 inch.
Bring the water to a boil over medium-high heat. Reduce to a gentle boil and cook for 15–20 minutes, or until the sweet potatoes are fork-tender.
Drain the sweet potatoes thoroughly, then return them to the warm pot. Let them sit for 2–3 minutes to allow any excess moisture to evaporate.
Add the butter to the potatoes and mash with a hand mixer or potato masher until the butter is melted and incorporated.
Gradually add the milk, mixing until the potatoes reach your desired consistency. You may not need all of the milk.
Stir in the salt and taste. Adjust the seasoning if needed.
Serve warm with an extra pat of butter if desired.
Notes
Starting the potatoes in cold water helps them cook evenly from the inside out.
Letting the potatoes dry for a few minutes after draining prevents watery mashed sweet potatoes.
For an extra creamy texture, warm the milk before adding it to the potatoes.
These mashed sweet potatoes can be refrigerated for up to 4 days and reheated with a splash of milk.
