Heat the olive oil in a large pot over medium heat.
Add the diced onion, celery, and carrots. Cook for 7–10 minutes, stirring occasionally, until softened.
Stir in the minced garlic and cook for 30 seconds, or until fragrant.
Add the diced chicken. Season with the cumin, coriander, salt, and black pepper. Cook for 4–6 minutes, stirring occasionally, until the chicken is lightly browned.
Pour in the chicken broth. Add the undrained diced tomatoes with green chilies, jalapeño, and frozen corn.
Bring the soup to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the vegetables are tender and the chicken reaches an internal temperature of 165°F.
Stir in the chopped cilantro.
Ladle the soup into bowls and top with sour cream and tortilla strips.
Serve warm.
