This Mexican Tater Tot Casserole is layered with seasoned beef, beans, corn, cheese, and golden tater tots! A comforting, crowd-pleasing dinner that’s ready in under an hour.

Instructions
Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
In a large skillet over medium-high heat, cook 2 pounds ground beef and 1 diced onion for 6–7 minutes until the beef is browned and the onion is softened.
Add 1 tablespoon minced garlic and cook for 1 additional minute.
Stir in 2 cans (10 ounces each) red enchilada sauce, 1 can (15 ounces) drained and rinsed black beans, 2 cups frozen corn, 1 can (4 ounces) diced green chiles, 1 tablespoon chili powder, 2 teaspoons ground cumin, 1 teaspoon oregano, 1 teaspoon salt, and ½ teaspoon black pepper.
Simmer the mixture for 5 minutes.
Pour the beef mixture into the prepared baking dish.
Arrange 32 ounces frozen tater tots in a single layer on top of the beef mixture.
Bake uncovered for 35 minutes, or until the tater tots are crispy.
Sprinkle 3 cups shredded Mexican cheese blend evenly over the top and bake for an additional 5–7 minutes until the cheese is melted and bubbly.
Let the casserole stand for 5 minutes before serving.
Top with shredded lettuce, diced tomatoes, sour cream, black olives, diced avocado, fresh cilantro, and sliced jalapeños if desired.
