Wash the mint leaves and discard any brown or damaged leaves.
Bring 1 cup of water to a boil. Remove from the heat and add ¼ cup of the mint leaves. Let steep for at least 15 minutes, then add ice to cool.
Strain out the mint leaves and pour the infused water into a large pitcher.
Add the remaining ¼ cup mint leaves and 7 cups cold water to the pitcher. Gently press the mint leaves against the sides of the pitcher with a wooden spoon to release their flavor.
Refrigerate for at least 1 hour before serving.
Serve chilled. Store any leftover mint water in the refrigerator for up to 3 days.
Notes
You can also add lemons, limes or sparkling water to change up the flavor of this easy mint water.
