For the Beef:
Place 1 pound lean ground beef into a 5–6 quart crock pot.
Pour ½ cup salsa over the beef and sprinkle 2 tablespoons taco seasoning on top.
Cover and cook on high for 3–4 hours until the beef is fully cooked and no longer pink.
Use a spoon to break apart the taco meat before serving.
Cheese Instructions:
Cut 32 ounces Velveeta cheese into cubes and place into a 3–5 quart crock pot.
Pour 1 can (10 ounces) Rotel over the cheese.
Cover and cook on low for 2 hours or on high for 1 hour, stirring occasionally, until the cheese is completely melted and smooth.
Guacamole Instructions:
Cut 2 ripe avocados in half and remove the pits.
Place avocados in a mixing bowl. With a fork or potato masher begin to gently mash them up.
Add ¼ cup salsa and stir until combined.
Squeeze the juice from ½ lime over the avocado mixture.
Add ¼ teaspoon garlic salt and stir well.
Taste and add additional garlic salt if desired.
Other Instructions:
Rinse and drain 1 can black beans.
Dice 2 roma tomatoes.
Slice 2 bunches green onions.
Drain 2 small cans black olives and 1 jar (16 ounces) jalapeños.
Place the black beans, tomatoes, green onions, black olives, jalapeños, and tortilla chips into individual serving bowls.
Set the crock pots with the taco meat and nacho cheese alongside the guacamole and toppings so everyone can build their own nachos.
