Wash the kale thoroughly and dry completely with a clean kitchen towel or salad spinner.
Remove and discard the tough stems and ribs. Tear the kale leaves into 1–2-inch pieces.
Place the kale in a large bowl. Drizzle with olive oil and gently massage the oil into the leaves until evenly coated.
Arrange the kale in a single layer on ungreased baking sheet, making sure the pieces do not overlap.
Season lightly with salt and black pepper.
Bake for 18–20 minutes, or until the kale is dry and crisp. Check toward the end of the cooking time to prevent burning.
Let cool slightly and serve.
Notes
Make sure the kale is completely dry before adding the olive oil. Excess moisture can prevent the chips from becoming crisp.Arrange the kale in a single layer without overlapping for even baking.For additional flavor, sprinkle with a small amount of grated Parmesan cheese before baking.Store cooled kale chips in an airtight container.
