Instructions
In a large mixing bowl, beat the softened butter and peanut butter with a hand mixer until smooth and creamy.
Mix in the vanilla extract.
Gradually add the powdered sugar, mixing until a soft dough forms that is no longer sticky.
Refrigerate the peanut butter mixture for 30 minutes.
Line a baking sheet or tray with parchment paper and arrange 50 pretzels in a single layer.
Scoop about ½ tablespoon of the peanut butter mixture, roll it into a ball, and place one on each pretzel.
Top each with a second pretzel and gently press to create a sandwich.
Refrigerate the pretzel sandwiches while you melt the chocolate.
Place the chocolate melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and melted.
Dip each pretzel bite halfway into the melted chocolate. Place back on the parchment-lined baking sheet.
Let the chocolate set completely at room temperature or refrigerate for 10-15 minutes until hardened.
Serve immediately or store in an airtight container.
Notes
Refrigerate the leftovers in an airtight container for up to 2 weeks.
