Poppyseed Chicken is a classic recipe that is ready in about 30 minutes. Creamy chicken, buttery cracker topping & poppy seeds results in a delicious family friendly casserole.
4cupsChicken Breastsshredded, approximately 4 chicken breasts
1cupSour Cream
1canCream of Chicken Soupapproximately 10.75 ounces
½teaspoonSalt
1TablespoonPoppy Seeds
Topping:
½cupButtermelted
2cupsCrushed Ritz Crackersapproximately 1 ½ sleeves
Instructions
Preheat the oven to 350 degrees F.
Place the chicken in the bottom of a 9X13 baking dish.
In a large bowl, 1 cup sour cream, 1 can cream of chicken soup, ½ teaspoon salt, and 1 tablespoon poppy seeds.
Spread this mixture on top of the chicken in the baking pan.
In a separate bowl, combine ½ cup melted butter with 2 cups crushed Ritz crackers.
Bake for 20-25 minutes until the top of the casserole is slightly browned and the sauce begins to bubble at the bottom of the pan.
Let the casserole rest for 5 minutes and then it’s ready to serve and enjoy!
Notes
You can either make your own shredded chicken breasts or use a Rotisserie chicken and shred the chicken off the bones. This is a great easy chicken recipe and you can easily add 2 cups of cooked rice into the casserole at the bottom under the shredded chicken. You can also add frozen veggies or fresh broccoli into the casserole before baking to make it a complete meal. Refrigerate the leftovers in an airtight container for up to 5 days.
