Instructions
Place 2 pounds boneless pork roast in the crockpot.
Add 2 cloves minced garlic, 1 small diced onion, 1 can (15 oz) red kidney beans (drained and rinsed), and 1 can (15 oz) pinto beans (drained and rinsed). Stir in 2 teaspoons paprika, 2 teaspoons cumin, 1 tablespoon chili powder, 1 teaspoon salt, 1 teaspoon black pepper, and ¼ teaspoon cayenne pepper. Add 1 can (28 oz) crushed tomatoes, ½ cup barbecue sauce, and 2 cups beef broth.
Cover and cook on low for 8-10 hours or on high for 4-5 hours until the pork shreds easily.
Remove the pork from the crock pot. Shred the pork and then dice it (so that it will easily fix on a spoon). Stir it back into the crock pot.
Taste test and add more salt and pepper based on your preference.
Serve while warm with your favorite chili toppings and enjoy!

Variations Ideas
Change the Beans - You can easily switch out the beans to any you prefer. Black beans or white beans will also be delicious in this recipe.
Add Veggies - This chili is delicious with the addition of frozen corn, green chiles or chopped bell peppers.
Pork - Substitute the type of pork that you use and make this chili with a pork loin, boneless pork shoulder, pork tenderloin.
