Ingredients

  • 1 1/2 pound chuck roast cut into 1 1/2 inch pieces or pre-cut stew meat
  • 1/4 cup flour
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 pounds Yukon Gold potatoes quartered
  • 1 pound baby carrots
  • 1 onion diced
  • 1 tablespoon minced garlic
  • 5 cups beef broth
  • 1 8 oz can tomato paste
  • 1/4 cup red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried thyme
  • 2 bay leaves
  • Fresh parsley chopped to top

Instructions

  • In a large bag, place the roast, flour, salt and pepper. Toss to coat. Place in the bottom of the crock pot.
  • Pour everything else on top.
  • Cover and cook on low for 8 hours or until beef is tender
  • Remove the bay leaves and serve.
  • Top with fresh parsley.
