Preheat the oven to 450°F. Line a large baking sheet with parchment paper.
Cut the cauliflower into evenly sized bite-sized florets.
In a large mixing bowl, whisk together the buffalo sauce and ranch seasoning until well combined.
Add the cauliflower and toss until all the florets are evenly coated.
Spread the cauliflower in a single layer on the prepared baking sheet, leaving a little space between the pieces for even roasting.
Bake for 18-20 minutes, stirring halfway through, until the cauliflower is tender and lightly browned around the edges.
Serve immediately with ranch or blue cheese dressing for dipping, if desired.
Notes
If you want your cauliflower a little crispier, broil it for 2-3 minutes after the cook time until the cauliflower is the crispiness that you prefer.*Refrigerate the leftovers in an air tight container for up to 4-5 days. When reheat, I recommend broiling for 2-3 minutes to warm them through and make them crispy again.
