Roasted Zucchini is the perfect side dish to serve with any meal. The zucchini roast tender and is seasoned with simple spices for a delicious Side Dish Recipe.
Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
Slice 1 ½ pounds zucchini into rounds or half moons and place them in a large bowl.
Drizzle 2 teaspoons extra virgin olive oil over the zucchini.
Sprinkle with ½ teaspoon Italian seasoning, ½ teaspoon sea salt, ¼ teaspoon garlic powder, and ¼ teaspoon black pepper. Toss until evenly coated.
Spread the zucchini in a single layer on the prepared baking sheet.
Roast for 15–20 minutes until tender and lightly browned.
Drizzle with juice from ¼ lemon before serving.

You can cut the zucchini how you prefer, I like bite size pieces to make it easy to serve. The zucchini will get soft as it cooks. If you like softer zucchini, cook closer to 20 minutes and if you prefer firm zucchini, then cook closer to 15 minutes. Refrigerate the leftovers in an airtight container for up to 5 days.
