Roasted Zucchini is the perfect side dish to serve with any meal. The zucchini roast tender and is seasoned with simple spices for a delicious Side Dish Recipe.
Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
Cut off the ends of the zucchini and quarter then lengthwise. Then dice each quarter into approximately 2 inch pieces and place them in a large mixing bowl.
Toss the zucchini with the olive oil, Italian seasoning, salt and garlic powder until the zucchini is well coated with the olive and seasonings. Spread it onto the baking sheet into a single layer.
Bake in the preheated oven for 15-20 minutes until the zucchini is golden brown around the edges.
Squeeze the lemon juice on top right before serving and enjoy!

You can cut the zucchini how you prefer, I like bite size pieces to make it easy to serve. The zucchini will get soft as it cooks. If you like softer zucchini, cook closer to 20 minutes and if you prefer firm zucchini, then cook closer to 15 minutes. Refrigerate the leftovers in an airtight container for up to 5 days.
