Ingredients

All Purpose Flour

Unsalted Butter
softened at room temperature

Chopped Nuts - Either walnuts or pecans work great

Vanilla Extract

Instructions
Preheat the oven to 375°F. Line baking sheets with parchment paper.
In a large mixing bowl, beat the softened butter and ½ cup powdered sugar with a hand mixer or stand mixer until smooth and creamy.
Add the vanilla extract and mix until combined.
Reduce the mixer speed to low. Gradually add the flour and salt, mixing just until combined. Do not overmix.
Fold in the chopped nuts by hand.
Scoop the dough into 1-tablespoon portions and roll into balls. Arrange them on the prepared baking sheets.
Bake for 7–10 minutes, or until the edges are lightly golden.
Let the cookies cool briefly, just until they are cool enough to handle.
Place the remaining powdered sugar in a bowl. While the cookies are still warm, roll each cookie in the powdered sugar until well coated.
Transfer the cookies to a wire rack and cool completely.
Once cooled, roll the cookies in powdered sugar a second time before serving.
Notes
Store the cookies in an airtight container for up to 1 week. Freeze for up to 2–3 months.
