Make Sausage Tortellini Soup for a creamy, cozy and one pot soup! The perfect soup for chilly nights that's rich, hearty and packed with amazing flavor.
In a large stock pot over medium-high heat, brown 1 pound ground Italian sausage with 1 small diced yellow onion. Break up the sausage as it cooks.
Drain off any excess grease from the pan.
Add 3 cloves minced garlic (or 1 tablespoon pre-minced garlic) and cook for approximately 1 minute, until fragrant.
Stir in ½ cup all-purpose flour and cook for 1–2 minutes.
Add 2 teaspoons Italian seasoning, 1 teaspoon salt, ½ teaspoon black pepper, and ¼ teaspoon red pepper flakes. Stir to combine.
Slowly stir in 4 cups chicken broth and 1 cup water, scraping up any browned bits from the bottom of the pot.
Bring the mixture to a boil, then reduce the heat to low and simmer.
Stir in 9 ounces 3 cheese tortellini and 2 cups chopped kale. Cook for 3–5 minutes (or according to tortellini package directions), until the kale is slightly wilted and the tortellini is cooked through.
Stir in 1 cup heavy cream and cook for a few minutes until heated through and fully combined.
Taste and add additional salt and pepper if desired.
Serve warm and enjoy!

Recipe Tips
Cooking Tortellini - Cook the tortellini based on the package instructions once it's added to the soup. If you are using frozen tortellini, a longer cook time might be needed to cook it all the way through.
Sausage - Thoroughly cook the sausage in the large pot and make sure to drain sausage before adding in the other ingredients. We have even placed the sausage on a paper towel plate to remove excess grease.
Variations Ideas
Add more Vegetables - Add mushrooms, carrots, celery, bell peppers, tomatoes or zucchini for even more flavor.
Chicken Tortellini Soup - Swap sausage for cooked shredded chicken for a delicious variation.
Cajun Flavor - Add Cajun seasoning instead of Italian for a fun flavor change.
Sausage - I love using hot Italian sausage for added kick but you can use mild if you prefer and omit the red pepper flakes if you are sensitive to spice.
Fresh Herbs - Substitute the dried spices with fresh herbs and add in thyme, rosemary, basil, and oregano for even more depth of flavor.
