Sheet Pan Sausage and Veggies is a simple one-pan meal made with smoked sausage, sweet potatoes, and roasted vegetables. This easy dinner comes together with minimal prep and cleanup, making it perfect for busy weeknights.
Preheat oven to 400°F and line a baking sheet with parchment paper.
Dice 2 cups sweet potatoes (about 2 medium) into ¼-inch cubes. Trim and halve 1½ cups green beans and slice 2 bell peppers.
Spread the sweet potatoes, green beans, and bell peppers evenly on the baking sheet.
Add 12 oz smoked sausage (sliced into ½-inch pieces) on top of the vegetables.
In a small bowl, mix 1 tsp paprika, 1 tsp garlic powder, 2 tsp Italian seasoning, 2 tsp salt, and 1 tsp black pepper.
Sprinkle the seasoning mixture evenly over everything on the pan.
Bake for 30–40 minutes, stirring halfway through, until the sweet potatoes are tender and the vegetables are lightly charred.
