These Sheet Pan Steak Fajitas are made with flank steak, peppers, and onions tossed in a homemade fajita seasoning and roasted at 425°F, then finished with fresh lime juice and cilantro. They cost just $4.68 per serving and make an easy fajita night dinner.
2lbsflank steaksliced into ½-inch thick strips (slice extra-wide strips in half)
2bell peppersred and yellow, cored and sliced into strips
1medium yellow onionhalved and sliced from top to root
1tablespoonolive oil
Juice of 2 fresh limes
3tablespoonschopped cilantro
12-15small flour tortillas
For the Seasoning:
1tablespoonchili powder
1teaspoonpaprika
2teaspoonscumin
½teaspoononion powder
½teaspoongarlic powder
¼teaspoondried oregano
1teaspoonsalt
½teaspoonblack pepper
¼teaspooncayenne pepperoptional

Instructions
Preheat the oven to 425°F. Spray a large sheet pan with non-stick cooking spray or line it with foil for easy cleanup.
In a large bowl, combine the seasonings, steak, peppers and onions and olive oil. Toss until everything is coated in the oil and the seasoning mixture.
Spread the steak and vegetables into an even layer on the prepared sheet pan, keeping the steak from overlapping as much as possible.
Bake for 12-15 minutes, stirring halfway through, until the steak is cooked to your desired doneness and the vegetables are tender-crisp.
Wrap the tortillas tightly in foil and place them in the oven during the last 5 minutes of cooking to warm.
Remove the sheet pan from the oven. Drizzle the lime juice over the steak and vegetables and sprinkle with the chopped cilantro.
Serve in the warm tortillas with your favorite toppings and enjoy!

Slice the flank steak against the grain for the most tender bites.Skirt steak is a great substitute for flank steak.For the best texture, avoid overcooking the steak.
