Crock pot potato soup with chicken is creamy and full of flavor. If you love potato soup, chicken and potato soup will be a hit.The crockpot makes it easy.
Add 5 peeled and diced potatoes, 1 tablespoon minced garlic, ½ chopped onion, 3 chicken breasts, 3 chopped carrot sticks, 3 chopped celery sticks, 1 teaspoon dried thyme, 1 teaspoon salt, 1 teaspoon pepper, and 4 cups chicken broth to the crock pot.
Add the lid to the crock pot and cook on low for 6-7 hours.
Remove the 3 chicken breasts from the crock pot. Use a whisk to mix the remaining ingredients in the crock pot, breaking up the potatoes and thickening the broth.
Shred the cooked chicken and add it back to the crock pot.
Add 1 cup heavy whipping cream and 1 tablespoon Xanthan gum to the crock pot. Cover and cook for an additional 30 minutes to allow the soup to thicken.
Serve and top each serving with 1 cup shredded cheese divided evenly and 6 slices cooked and chopped bacon divided evenly. Enjoy!

The Xanthan gum is for thickening the soup. You can also use a corn starch slurry instead of the Xanthan Gum for thickening.
