Skip the campfire and make these chewy S'mores Cookies. Each bite is filled with chocolate, marshmallows and graham crackers for a gooey dessert everyone will love.
In a medium bowl, whisk together 1½ cups all-purpose flour, 1½ cups coarsely crushed graham crackers, ¼ teaspoon baking powder, and ¼ teaspoon salt.
In a large mixing bowl, beat ½ pound (2 sticks) softened butter, ¾ cup brown sugar, and ¾ cup granulated sugar until light and creamy.
Beat in the 2 eggs, one at a time, then mix in 1 teaspoon vanilla extract.
Combine Wet & Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
Add Chocolate Chips: Fold in 1 cup semi-sweet chocolate chips.
Scoop & Bake: Drop 2-ounce (about 2 tablespoons) portions of dough onto an ungreased baking sheet, spacing them apart. Bake at 350°F for 8 minutes.
Add Toppings: Remove the cookies from the oven and quickly press 4 mini marshmallows and 2-3 pieces of chopped chocolate onto each one.
Finish Baking: Return the cookies to the oven and bake for an additional 2 minutes, or until the marshmallows are golden brown.
