Instructions
In a large mixing bowl, combine: 3 cups flour, 1 tablespoon sugar, 2 teaspoons baking powder and 1 teaspoon salt.
Add 3 tablespoons vegetable shortening and use your hands or a pastry cutter to work the shortening into the flour mixture until crumbly.
Gradually pour in 1 cup warm water, mixing with your hands until a soft dough forms.
Cover the dough and allow it to rest for 20–30 minutes.
While the dough rests, heat approximately 3 inches of vegetable oil in a deep pot to 350°F.
Lightly flour a work surface and roll the dough out to approximately ¼-inch thickness.
Cut the dough into roughly 3-inch squares using a pizza cutter or knife.
Carefully place 3–5 dough squares at a time into the hot oil.
Fry for 1–2 minutes per side, turning with tongs, until lightly golden brown and puffed.
Remove the sopapillas and place them on a paper towel-lined plate to drain.
Repeat with the remaining dough.
Serve warm drizzled with honey and enjoy!
