Preheat oven to 350 and grease a 9X9 baking dish with cooking spray.
In a small bowl, combine ¼ cup brown sugar, ½ teaspoon ground cinnamon, and ¼ teaspoon ground ginger. Stir until well mixed and set aside.
Spread 3 cups cooked and mashed sweet potatoes evenly into the prepared baking dish.
Top the sweet potatoes with 2 apples that have been cored, peeled, and sliced. Pour ¼ cup half & half evenly over the apples.
Sprinkle the brown sugar mixture evenly over the top.
Dot the casserole with 2 tablespoons butter.
Bake for 25-30 minutes or until apples are tender and mixture is bubbly.
Serve warm and enjoy!
Notes
This casserole can easily be made ahead of time. Make as directed, cover and store in the refrigerator for up to 48 hours. Then allow the casserole to sit at room temperature for 30 minutes before baking.
