This Taco Casserole is loaded with the best taco flavors. It is the best weeknight meal for any family that is looking for a casserole recipe that the entire family will love!
Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks, about 8-10 minutes.
Drain excess fat, then add taco seasoning and 1/2 cup water. Simmer for 2 minutes.
Stir in black beans, diced tomatoes with chilies, and chunky salsa. Cook for another 2-3 minutes to combine flavors.
Layer half of the crushed tortilla chips in the bottom of the prepared baking dish.
Spread half of the beef mixture over the chips.
Sprinkle 1 cup of shredded cheese over the beef.
Repeat layers with remaining chips, beef mixture, and cheese.
Bake uncovered for 25-30 minutes, until the cheese is melted and bubbly.
Let cool for 5 minutes, then top with dollops of sour cream and sprinkle with sliced green onions before serving. Enjoy!
