This Tamale Pie is a hearty casserole with a savory ground beef filling, warm spices, and a golden cornbread topping. Easy to make, family-friendly, and perfect for weeknight dinners!
Preheat oven 375 degrees F. Spray a 9X13 baking pan with non-stick spray and set aside.
Heat a large skillet or Dutch oven over medium high heat. Add the ground beef and cook until browned, breaking it up as it cooks.
Stir in the bell peppers, onions , cumin , chili powder and salt. Cook for 3-4 minutes until the peppers start to soften.
Drain off any excess grease if needed.
Stir in the tomatoes, chillies, beans, corn and water.
Heat for a few minutes until heated through.
Stir in the shredded cheese.
Pour the mixture into the prepared pan into an even layer.
In a large mixing bowl, stir together the Jiffy corn mixes, eggs, milk and melted butter until combined.
Pour the batter over the top of the meat mixture and smooth it out into an even layer.
Bake for 30-40 minutes until the top of the cornbread is lightly golden brown and is cooked through.
Let sit for 5 minutes and then it's ready to serve and enjoy!

You can easily use a homemade cornbread recipe instead of the jiffy cornbread mixes if you prefer. Just spread the homemade mixture on top of the beef mixture and bake.Store any leftovers in an airtight container for up to 5 days.You can easily add any veggies or omit any from the meat mixture that you prefer. Carrots, olive or peas would all be delicious in this recipe.
