This Tamale Pie is a hearty casserole with a savory ground beef filling, warm spices, and a golden cornbread topping. Easy to make, family-friendly, and perfect for weeknight dinners!
Preheat the oven to 400 degrees F and grease a 9X13 baking dish.
In a large skillet over medium high heat, cook 1.5 lbs ground beef, ½ diced onion, ½ diced red bell pepper, and ½ diced green bell pepper until the beef is browned and the vegetables are tender. Drain excess grease.
Stir in 1 tablespoon ancho chili powder, 2 teaspoons cumin, 1 teaspoon salt, 1 can diced tomatoes, 1 can diced green chilies, 1 can whole kernel corn (drained), 1 can black beans (drained and rinsed), and ¾ cup water.
Simmer for 5–7 minutes until heated through, then pour the mixture into the prepared baking dish.
Sprinkle 1.5 cups shredded cheddar cheese evenly over the beef mixture.
In a mixing bowl, whisk together 2 Jiffy corn bread mixes, 2 eggs, ? cup milk, and ? cup melted butter until combined.
Pour the cornbread mixture evenly over the top of the casserole.
Bake for 25–30 minutes until the cornbread is golden brown and cooked through.
Let cool slightly before serving.

You can easily use a homemade cornbread recipe instead of the jiffy cornbread mixes if you prefer. Just spread the homemade mixture on top of the beef mixture and bake.Store any leftovers in an airtight container for up to 5 days.You can easily add any veggies or omit any from the meat mixture that you prefer. Carrots, olive or peas would all be delicious in this recipe.
