This is the best potato salad recipe. Skip the store bought stuff and make this delicious potato salad at home. This southern potato salad will be a hit!
Wash 2½ pounds Yukon Gold potatoes, cut them into quarters, and place them in a large stockpot.
Cover the potatoes with cold water until the water is about 1 inch above the potatoes.
Bring the water to a boil over high heat. Once boiling, add 1 tablespoon salt to the water and cook the potatoes for 13–15 minutes, or until they are fork tender. (You can also cook the potatoes in an Instant Pot if preferred.)
While the potatoes cook, prepare the dressing by whisking together 1 cup real mayonnaise, ½ cup sweet pickle relish (including the juice), 1 tablespoon yellow mustard, 1 teaspoon celery seed, ¼ teaspoon paprika, ½ teaspoon salt, and black pepper to taste in a medium bowl.
Chop 3 hard-boiled eggs, dice 1 celery stalk, dice ¼ cup sweet onion, and finely chop 1 teaspoon fresh dill.
Drain the cooked potatoes well. Remove any loose peels if desired, then chop the potatoes into ½-inch chunks. It's fine if some of the potatoes crumble slightly. Place the warm potatoes in a large mixing bowl.
Pour the dressing over the potatoes and gently stir until the potatoes are evenly coated. Fold in the chopped hard-boiled eggs, diced celery, diced sweet onion, and chopped fresh dill. Taste and season with additional salt and black pepper if needed. Garnish with additional fresh dill and a light sprinkle of paprika, if desired.
Cover and refrigerate for at least 4 hours, or overnight for the best flavor. Serve chilled and enjoy.
