In a medium mixing bowl, combine 4 cans (5 ounces each, drained) tuna, 1 finely diced celery rib, and ¼ cup finely diced red onion.
In a separate small bowl, mix together 2/3 cup mayonnaise, 2 tablespoons sweet pickle relish, 1 tablespoon lemon juice, 2 teaspoons chopped fresh dill, 1 teaspoon Dijon mustard, 1 teaspoon salt, and ½ teaspoon black pepper.
Pour the sauce mixture over the tuna mixture and gently stir until everything is evenly coated.
Cover and chill for at least 1 hour before serving.

Notes
Generally I use canned tuna for this recipe, but you can use the tuna packed in water in the packets instead if you prefer. I do not recommend the tuna packed in oil for this recipe. Store any leftovers in an airtight container for up to 4 days. Igenerally use approximately ½ cup of the tuna mixture per sandwich and this recipe is enough to make 6 sandwiches. I love serving this on whole wheat bread with some lettuce but it’s delicious as is or with crackers as well.
