Watergate Salad

Watergate Salad is a classic side dish or dessert salad that we make for all the holidays. Simple ingredients makes this pistachio pineapple delight a family favorite.

Ingredients

  • 1 pkg 3.4 ounce instant pistachio pudding mix
  • 1 can 20 ounce crushed pineapple, undrained
  • 1 cup miniature marshmallows
  • ½ cup chopped walnuts
  • 1 ½ cups whipped topping thawed
  • ½ cup sweetened shredded coconut
  • Maraschino cherries for garnish optional

Instructions

  • In a large bowl, stir together the pistachio pudding mix and undrained crushed pineapple until well combined and the pudding mixture begins to thicken.
  • Fold in the miniature marshmallows, chopped walnuts, and shredded coconut until evenly combined.
  • Gently fold in the thawed whipped topping until smooth and creamy.
  • Cover and refrigerate for at least 1 hour before serving.
  • Garnish with maraschino cherries, if desired, and serve chilled.

Notes

For softer marshmallows, add them before refrigerating and chill the salad for at least 1 hour. For chewier marshmallows, fold them in just before serving.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
