Pineapple Upside Down Cupcakes

They have all the flavors of the traditional cake but they are in a cupcake form!

Step 1

Make batter. Ppoon approximately 2 tsp of the brown sugar butter mixture into each cup of the muffin tin.

Step 2

Place the pineapple chunks in a circle around bottom with a maraschino cherry in center.

Step 3

Then fill each cup 2/3 full with the cake batter. Bake as directed. 

Step 4

Allow the cupcakes to cool completely on the baking sheet lined with waxed paper (for easy clean up) before serving.
