Make the marinade 2 days in advance. Mix together the marinade ingredients. Cover and refrigerate overnight.
The day before cooking, place the prime rib roast on a rack in a large roasting pan. Pour half of the marinade over the roast. Flip the roast over and pour the remaining roast over the other side of the roast.
Cover and refrigerate the roast overnight.
The day of cooking, let the prime rib sit at room temperature for 1 hour before cooking so that it can come to room temperature.
Preheat the oven to 450 degrees Fahrenheit.
Bake the prime rib at 450 degrees Fahrenheit for 30 minutes until the outside of the roast is seared and browned.
Then reduce the oven temperature to 250 degrees Fahrenheit.
Then cook for 2-2 1/2 hours depending on how you prefer your prime rib to be cooked (time and temperatures are listed in the recipe notes).
Use a meat thermometer to ensure that the beef is cooked to the temperature that you desire.
After the cook time, remove the prime rib from the oven. Cover it with foil and let it rest for 1 hour before slicing.
Slice the roast against the grain is approximately 1/2 inch thick slices. Serve with your favorite sides and enjoy!
