Cottage Potatoes is the ultimate side dish. This is one of our favorite comfort foods and it is loaded with flavor. Perfect for a potluck or a holiday dinner.
Place the potatoes in a large pot and cover them with water. Bring to a boil and simmer for about 10-15 minutes until the potatoes are fork tender.
Drain the potatoes and then return them back to the pot.
Then add in 2 tablespoons of butter, salt and pepper. Use an electric mixer to blend the potatoes until they are light and fluffy or use a hand masher to mash them to the consistency that you prefer.
Stir in the cottage cheese.
Place the mashed potato mixture in a 9X9 baking pan. Slice the remaining butter into thin strips and place it evenly on top. Sprinkle the paprika on top.
Bake (uncovered) for 30 minutes.
Remove from the oven. Let sit for 10-15 minutes.
Serve warm and enjoy!
