Fried zucchini is a delicious way to make zucchini. Thinly slice zucchini and coat them in a flour, egg, and panco bread crumb coating for the crispiest fried zucchini.
You will need 3 small bowls. Place flour in one bowl, eggs and milk in a second bowl (beat them together) and then the Panko crumbs in a third bowl.
Slice the zucchinis in circle slices.
Dip the zucchinis in the milk, then coat the zucchini slices in the flour. Then dip them back into the egg mixture and then in the bread crumb mixture. Place on a separate plate until ready to fry.
Continue to do this until all of the zucchinis have been coated.
Add oil to a small saucepan. You’ll need about 2? of oil. Heat on medium heat until it has reached a temperature of 375 degrees F.
Place the coated zucchinis in the oil and fry on each side until they are golden brown. I cooked mine for approximately 2-3 minutes per side.
Then transfer the fried zucchinis to a plate lined with a paper towel. Allow them to cool (they will be hot). You can top them with salt to keep them crisp at this time.
Then serve with your favorite dipping sauce and enjoy!

Refrigerate the leftovers in an airtight container for up to 3-4 days.
