Ingredients
- 1 box vanilla cake mix
- 12 cupcake liners
- egg (oil, water (according to cake mix))
- a double batch of Vanilla Buttercream Frosting (very easy to make)
- food coloring in yellow (pink, green, blue)
- Peeps (yellow, pink, green, blue)
- Decorating sprinkles (in pink, green, yellow, and blue)
- ⅓ cup vegetable oil
Instructions
- Preheat the oven according to the cake mix package directions.
- Line two cupcake pans with 24 cupcake liners.
- Prepare the vanilla cake mix according to the package directions, including the required eggs, oil, and water.
- Fill each cupcake liner about ? full with batter.
- Bake according to package instructions.
- Remove from the oven and allow the cupcakes to cool completely.
- Prepare a double batch of vanilla buttercream frosting.
- Divide the frosting evenly into 4 bowls.
- Tint each bowl with a different color: Yellow, Pink, Green and Blue
- Stir each bowl until the color is evenly incorporated.
- Transfer each frosting color into separate piping bags.
- Cut the tip off each bag and frost the cupcakes. Start with a small dot in the center, then pipe from the outside edge inward to create a swirl.
- Decorate each cupcake with coordinating sprinkles: Pink sprinkles on pink frosting, Yellow sprinkles on yellow frosting, Green sprinkles on green frosting, Blue sprinkles on blue frosting
- Top each cupcake with a matching Peeps bunny.
- Serve and enjoy!
