Instructions
Preheat the air fryer to 330°F. Lightly grease 3 mini loaf pans with nonstick cooking spray.
Peel the bananas and mash them in a large mixing bowl until mostly smooth.
Stir in the melted butter, egg, granulated sugar, vanilla extract, baking soda, and salt until well combined.
Add the flour and stir just until incorporated. Do not overmix.
Divide the batter evenly among the prepared mini loaf pans, filling each about
halfway full
.
Place the loaf pans in the air fryer basket, working in batches if needed depending on the size of your air fryer.
Air fry for 20 to 25 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
Let the loaves cool in the pans for 5 to 10 minutes, then carefully remove them and transfer to a wire rack to cool completely.
Slice, serve, and enjoy!
Notes
Store the leftover bread in an airtight container or bag at room temperature for up to one week.
