Preheat the air fryer to 390 degrees Fahrenheit. If your air fryer does not have a preheat option, run the air fryer at 390 degrees Fahrenheit for 5 minutes.
Trim the fat from 2 boneless skinless chicken breasts and cut the chicken into 1-inch pieces.
In a small bowl, combine 2 teaspoons Italian seasoning, 1 teaspoon pepper, ½ teaspoon salt, 1 cup breadcrumbs, and 2 tablespoons grated Parmesan cheese.
Melt ½ cup butter in a separate bowl.
Dip each piece of chicken into the melted butter and then coat it in the breadcrumb mixture.
Place the coated chicken pieces in a single layer in the air fryer basket. Cook in batches if needed.
Air fry for 10-12 minutes until the nuggets are crispy and the chicken reaches an internal temperature of 165 degrees Fahrenheit.

Refrigerate the leftovers in an air tight container for up to 5-7 days. To reheat, place them in the air fryer for 2-3 minutes to warm and crisp them back up. Enjoy!
