Preheat the air fryer to 400°F and lightly spray the basket with olive oil spray. If your air fryer does not have a preheat function, run it for 5 minutes at 400°F.
In a mixing bowl, combine 2 cups shredded cooked chicken, 2 Tbsp taco seasoning, and ½ cup salsa. Stir until evenly mixed.
Lay 1 flour tortilla on a clean work surface.
Spread approximately ¼ of the chicken mixture onto one half of the tortilla.
Top the chicken mixture with ½ cup Mexican shredded cheese.
Fold the tortilla in half and secure it with toothpicks to keep it closed during cooking.
Repeat with the remaining 3 tortillas, remaining chicken mixture, and remaining cheese.
Place the quesadillas in the air fryer basket in a single layer. Cook in batches if necessary.
Air fry for 6 minutes, flipping halfway through the cooking time.
Remove the quesadillas from the air fryer and transfer them to a cutting board.
Carefully remove the toothpicks, slice the quesadillas, and serve immediately.

You can easily use your favorite type of cheeses in this quesadilla recipe. Use your favorite.These are best served fresh but you can refrigerate the leftovers in an airtight container for up to 5 days.You can use shredded rotisserie chicken or pre-made shredded chicken for this recipe.
