Slice 1 pound andouille sausage into 1 inch pieces.
Add 16 oz penne pasta, 1 diced red bell pepper, 1 can crushed tomatoes, 1 tablespoon Italian seasoning, 2 teaspoons minced garlic, 2 cups water, 1 cup milk, 1 teaspoon salt, and 1 teaspoon pepper to a large skillet.
Stir to combine and bring the mixture to a boil.
Cover and reduce the heat to medium-low. Cook for 10-15 minutes, stirring occasionally, until the pasta is tender.
Stir in the sliced andouille sausage and ½ cup parmesan cheese.
Continue cooking for 2-3 minutes until the sausage is heated through and the cheese is melted.
Serve immediately.
