This Copycat Arby’s Beef and Cheddar Recipe features warm deli-style roast beef, melty cheddar cheese sauce, and a homemade red sauce on a toasted onion bun. A quick and delicious homemade version of the classic Arby’s favorite!
In a small saucepan, whisk together ½ cup ketchup, ¼ cup apple cider vinegar, 2 tablespoons light brown sugar, ¼ cup water, 1 tablespoon Worcestershire sauce, ½ teaspoon paprika, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ? teaspoon cayenne pepper, ? teaspoon kosher salt, and 1 tablespoon cornstarch.
Heat the sauce over medium-high heat for 5–7 minutes, stirring frequently, until thickened and combined.
Remove the sauce from the heat and let it cool slightly while preparing the sandwiches.
Heat 2 cups beef broth in a saucepan over medium heat until warmed through.
Add 16 ounces thinly sliced deli roast beef to the broth one slice at a time. Let the beef warm in the broth for a few minutes before removing. Continue until all the roast beef is heated through.
Heat 1 cup nacho cheese sauce in the microwave in 20-second intervals until warm, or prepare homemade cheese sauce if preferred.
Place the warmed roast beef evenly onto 4 onion hamburger buns.
Top each sandwich with warm nacho cheese sauce and drizzle with the prepared sauce.
Serve warm and enjoy!

Watch the sauce as it cooks. If it gets too thick, thin it out with a small amount of water until it’s the consistency that you prefer. If the sauce does not get thick enough, continue to cook on medium heat until it thickens. You can use store bought sauce instead of making your own if you prefer. I heat up the roast beef slices one at a time but if you use more broth and a bigger pan, you can heat up all the slices at once if you prefer. You can easily serve without the cheese sauce to make a regular Arby’s roast beef sandwich as well. Heat up the buns before assembling if you prefer but they are great as is as well.
